Today has been a hot and hectic day. For lunch I whipped up some stuffed avocados and they were just perfect–simple, refreshing and delicious. Avocados are nutrition superstars as they are loaded with over 20 vitamins and minerals and contain lots of good, monounsaturated fats and even fiber. I love incorporating them into my meals whenever I can.
The beauty of this simple recipe is that you can stuff these yummy superfoods with whatever you’d like. I sometimes use chicken and top them with salsa verde. The possibilities are endless!
Tuna Stuffed Avocados:
- 1 ripe avocado, pit removed
- tuna, chicken or filling of choice
- tomatoes or fresh salsa
- optional-olive oil and balsamic vinegar drizzled on top
